Easy High-Protein Meal Prep for Building Muscle 💪🥗

Trying to build muscle doesn’t mean you have to live off plain chicken breast and broccoli for the rest of your life. Thank goodness, because I’m pretty sure my taste buds would file for divorce.

When you’re working on gaining muscle, your body needs enough protein to support muscle growth and repair, along with carbohydrates for energy and fats as part of an overall balanced diet. And when life gets busy, meal prepping can make staying consistent a whole lot easier.

This High-Protein Chicken & Sweet Potato Power Bowl is simple, filling, easy to reheat, and perfect for prepping several lunches or dinners at once.

🍗 High-Protein Chicken & Sweet Potato Power Bowls

Makes: 4 meal-prep bowlsPrep Time: About 15 minutesCook Time: 25–30 minutes

What You'll Need

  • 1½ pounds boneless, skinless chicken breast

  • 2 medium sweet potatoes, peeled and cubed

  • 2 cups cooked brown rice or quinoa

  • 2 cups broccoli florets

  • 1 red bell pepper, chopped

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • ½ teaspoon onion powder

  • Salt and black pepper to taste

  • 1 avocado, divided between the bowls

  • Fresh lime, optional

Let's Meal Prep!

Preheat your oven to 425°F.

Cut the sweet potatoes into bite-sized cubes and place them on a baking sheet. Toss them with about half of the olive oil, a little salt, pepper, and smoked paprika. Roast for approximately 25–30 minutes, flipping halfway through.

While those are roasting, season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.

Cook the chicken in a skillet over medium heat with the remaining olive oil until it is cooked completely through and reaches an internal temperature of 165°F. Let it rest for a few minutes before slicing.

Steam or roast your broccoli and bell pepper until they're tender but still have a little crunch.

Now comes the easy part—build those bowls!

Divide the rice or quinoa between four meal-prep containers. Add your chicken, sweet potatoes, broccoli, and peppers.

When you're ready to eat, warm up your bowl and add some fresh avocado and a squeeze of lime.

Why This Makes a Great Muscle-Building Meal

You've got lean protein from the chicken, carbohydrates from the sweet potatoes and grains, vegetables for fiber and micronutrients, and healthy fats from the avocado and olive oil.

More importantly, it's actual food you'll probably look forward to eating.

Because here's the thing: getting stronger isn't about finding one magical "muscle-building" meal. It's about consistently eating enough nutritious food, getting adequate protein and total calories, training appropriately, and giving your body time to recover.

Want Even More Protein?

You can easily customize these bowls. Add extra chicken, use quinoa instead of rice, sprinkle on some cheese, add black beans, or serve the bowl with Greek yogurt mixed with lime and seasonings as a creamy sauce.

And if you're trying to increase calories for muscle gain, bump up the rice, sweet potato, avocado, or olive oil instead of forcing yourself to eat enormous portions of chicken.

Meal Prep Tip

Keep the avocado separate until you're ready to eat unless you're a fan of mysterious brown avocado. 😆

Store the prepared chicken, vegetables, sweet potatoes, and grains in airtight containers in the refrigerator. For longer storage, freeze portions without the avocado and thaw them when needed.

Building Muscle Doesn't Have to Be Complicated

You don't need a refrigerator full of expensive supplements or a meal plan that makes eating feel like another full-time job.

Start simple.

Protein. Quality carbs. Vegetables. Healthy fats. Consistency.

Prepare a few meals ahead of time, get your workouts in, rest, and keep showing up.

Your muscles aren't going to appear overnight—but at least dinner is already handled. 💪😂
